We are beer geeks constantly experimenting & evolving, we brew non-conformist beers in small batches, not following any traditional brewing style has allowed us to brew beers that are designed around changing seasons, changing lifestyles & outdoor activities.
Today our research is focused on two broad areas:
Yeast Fermentation
We focus on yeast propagation, isolating wild yeasts, and building a diverse yeast library. Our work with mixed culture ferments from various cultures helps us understand microorganisms and collaborate with fermentation enthusiasts.
Culinary Brewing
We combine various produce and techniques like fermentation, barrel ageing, and freeze drying to evolve our flavour palette and express unique tastes in our beers.
